Regenerating the land, nourishing the table
Our agricultural land is centre stage in our journey toward self‑sufficiency in energy, water and food. By implementing regenerative agriculture, we preserve and renew the whole ecosystem, boost biodiversity, and rebuild soil fertility while cultivating abundant and resilient crops for our guests across the seasons.

Our animals — hens, pigs, donkeys, cows, sheep, and bees — are integral to our symbiotic system. They fertilise the land, support biodiversity, and provide natural pest control, reinforcing the resilience of our soil and ecosystem.

Fresh. Nutrient-rich. Flavourful - all season long
As the sun rises, the farmers’ morning harvest finds its way to your plate: eggs still warm from the coop, sobrasada drizzled with honey atop toasted tartine, and a green juice pressed from the morning’s harvest. Genuine, tasteful, seasonal, born of the finca’s land and care.
